Recipe – Express Veggie Couscous

Take your taste buds on a trip through tasty town with this vegetarian couscous that is packed with nutrients and flavor, and prepared in no time in the Micro Healthy Delight.

Express Veggie Couscous

Ingredients to serve 2 people:
• 200 g / 1 zucchini
• 200 g / 1 red bell pepper
• 100 g cherry tomato
• 100 g of cooked chickpeas (tin)
• 75 g / 100 ml couscous (medium)
• Salt and pepper
• Tabasco
• 15 ml / 1 tbsp olive oil
• Chopped parsley for serving

1. Dice the zucchini with Chef Press Dicer 15 mm. Deseed and peel the bell pepper and dice it too.
2. Cut the cherry tomatoes in 2.
3. Place zucchini, pepper, and tomato in the Micro Healthy Delight.
4. Add 100 ml water, cover and microwave at 600 watts for 5 min.
5. Allow to stand for 1 min.
6. Rinse the chickpeas. Add the chickpeas and the couscous to the Micro Healthy Delight.
7. Season with salt, pepper and tabasco, then stir. Cover and microwave for 2 min. at 360 watts.
8. Stir, add olive oil and allow to stand for 2 min. before serving
